Whole Foods- Creamy Butternut Squash Soup
It's been a hard month, trying to be motivated to create recipes and write something for all of you has been the last thing I wanted to do, sorry about that:) It's just been one of those months where I have had no desire to create and share.
The weather has changed a little in the last couple of days; it's getting cooler and the smell of fall is in the air at times. I finally wanted to create a recipe, soup, of course. Who doesn't crave a delicious, creamy whole foods soup when the climate starts to get a little cooler and cozier.
This soup does not contain dairy, is gluten free and contains a great amount of vitamin A; for healthy eyes, maintaining healthy skin and it is necessary for producing red blood cells.
My favorite thing about this recipe is that it takes 20 minutes to cook. Seriously, because I am using frozen squash that has already been seeded and peeled, really, the only thing that you need to cut is the onion, garlic and ginger. It's quick, easy and deliciously whole!
