Whole Foods- Beet and Walnut SaladThis is such a delicious, classic salad and here is my version of it. The LOVE comes from a little orange zest and garnishing the salad with summer edible flowers. I love the sweetness of the balsamic cream and those crunchy bits of Maldon sea salt and the creaminess of the French goat cheese, yuuuuum!
Our liver loves beets, they give the liver specific nutrients that help the liver detoxify unwanted chemicals and other toxins. Walnuts are filled with omega 3 oil; which we need for proper brain development, healthy skin and hair and healthy bowels.
I sometimes use the tops of the beets for this recipe. Beet greens are filled with many nutrients and it's always nice to use the whole vegetable in a recipe. I sauté the beet greens in some organic, extra virgin coconut oil, sea salt and pepper. I then added the beet salad on top of the beet greens.
