Whole Foods- Curry Cauliflower with SpinachHere is my version of curried coconut cauliflower. It's vegan, gluten free and dairy free, and probably free of other ingredients as well, but I wanted to highlight those specific ones. It seems as though, cauliflower and Indian red curry powder love each other just like honey and vanilla do!
I could have created a very time consuming and difficult version of this but like I always say, it doesn't have to be complicated to be delicious. As long as you purchase a good quality Indian red curry powder and use full fat coconut milk, you will be so happy that you made this.
Cauliflower is a powerful anti-cancer, cruciferous vegetable. The chickpeas are high in fiber and contain great vegetable protein to help build tissue and muscle. The wilted spinach actually contains more iron in it than if it were not cooked, did you know that?
The LOVE is the lime leaves, I do say they are optional but if you can find them, use them. You can always freeze the leftover lime leaves for the next time you make this dish or my Thai red curry coconut vegetables.
